Recipe: Cilantro-Lime Chickpea & Rice Bowl

I threw this cilantro-lime chickpea and rice bowl recipe together for dinner with ingredients I already had in my house and it turned out so delicious I had to share. This recipe is a perfect summer dish and requires NO OVEN. It only took me about 30 minutes to make so it’s great for a healthy, quick dinner or lunch. Add in any other ingredients you want, like corn, sweet onion or avocado! While I ate it as a full meal, it could also be served in smaller portions as a yummy side dish.

Ingredients:

  • 2 cups brown or jasmine rice
  • 1-2 limes
  • 1 mango
  • 1 can chickpeas
  • 1/2 cup cilantro
  • Garlic powder
  • Salt
  • Lemon pepper
  • Oil

Directions

  1. Cook rice according to package directions. Add in garlic powder and salt to water.
  2. Toss chickpeas in oil, salt, garlic powder & lemon pepper. Toast in a conventional oven for about 15 minutes.
  3. While rice and chickpeas are cooking, finely chop cilantro. Cut mango into cubed pieces.
  4. Once rice is ready and chickpeas are crispy & brown, add all ingredients into the pot of rice. Squeeze 1-2 limes (depending on your preference) over the rice.
  5. Mix it all up, serve and enjoy!
